B Bar Gazette – November 2023
B Bar GazetteIssue #6 November 2023Dear Friends, During times of great uncertainty, we draw comfort from our role as stewards of the land, producers of healthy food, and members of the regenerative community. Plentiful moisture allowed our cattle to graze green grass throughout the summer, fatten up with nutrients like never before, and be sustained by plenty of forage throughout the winter. Wintertime, with more time indoors, provides a great chance to create a warm and comfortable meal, gather friends and family, share deeper conversations, and put a smile on everyone’s face. We’re excited to share a couple of our favorite B Bar Beef slow-cooked comfort recipes with you. ![]() Short ribs prepared in a simple yet elegant styleSlow Cooking for Comfort Short Ribs and Chuck Roast, are two of our favorite cuts that are best cooked slowly in an oven, slow cooker, or Instant Pot. Although they are fairly similar when it comes to preparation, the cuts come from different parts of the cow and have different tastes and textures. ![]() Adding gravy to a retreat group's meal in Tom Miner BasinBraised Short Ribs Short ribs are typically cut into short rectangular pieces with a short portion of the bone rib attached. Known for its rich marbling, this luscious cut will fall off the bone and melt in your mouth after a slow cook. We typically make homemade mashed potatoes and carrots as a base for the braised finish.Click: To Learn Our RecipesChuck Roast Chuck roast, also known as pot roast, comes from the muscly shoulder of the animal which embodies a stronger beef flavor. While chuck roast is a larger and leaner cut, it can handle various seasonings and vegetables. We recommend you cook this with extra broth and serve as a hearty soup. ![]() Order your organic beef Our organic grass-fed and finished beef will take a little bit less time to achieve tenderness than conventionally raised beef.
